As soon as you arrive, you immediately sense the love for animals and for the local area. Tenuta San Pietro adopts a strictly free-range farming method, ideal for showcasing a symbolic Tuscan breed like the Cinta Senese.

We had the unique opportunity to observe closely:

Lactating sows immersed in their natural habitat, serene and protective.

The piglets, born just a few days ago, agile and curious, taking their first steps under the Tuscan hill sun.

The diet of these animals plays a fundamental role in the final quality of the product: the pigs grow by feeding naturally, enriching their diet with protein-rich acorns that give the meat that unmistakable, rich and complex flavour profile.

From farm to fork: processing, maturing and preservation (in a place like nowhere else in the world)

The philosophy of the Estate does not stop at farming, but continues with a closed cycle that guarantees traceability and absolute quality. The tour led us through the modern processing, curing and storage facilities, located in what is perhaps the world's first instance of slaughter chambers created inside an old deconsecrated church.

An evocative and jarring combination, in which the sacred and the profane unite: ancient sacred architecture engages in a dialogue with the modernity of exceptional production, creating a truly unrepeatable atmosphere that further elevates artisanal work.

The excellence of the meat: not only Cinta Senese, but also Wagyu

Although the Cinta Senese is the undisputed queen of the estate, Tenuta San Pietro has a magnificent surprise in store for lovers of elite meat: the farm also successfully breeds prized Wagyu cattle, a global synonym for melt-in-the-mouth tenderness and exceptional marbling.

Dinner: a triumph of authentic and most elegant flavours

The day ended in the best possible way: a dinner experienced in an extraordinarily familiar, warm and welcoming atmosphere, yet capable of expressing first-rate elegance and culinary quality.

The meal was a succession of gastronomic emotions, embellished with an extraordinary gem in the glass: during the wonderful convivial dinner we in fact tasted the Metodo Classico “Rosaramo Archè 18” Raboso Piave from the Baccichetto winery. Thanks to its long rest on the lees and prolonged bottle ageing, this wine offered a stimulating and thoroughly enjoyable pairing for both the palate and chromatic harmony, sporting a splendid antique pink colour.

The journey of flavours continued, reaching the absolute highest peaks thanks to:

Cinta Senese salami: characterised by a unique aromatic profile and highly original spicy notes that win you over at the first taste.

Finocchiona: soft, fragrant with wild fennel seeds, perfectly balanced.

The lards: velvety, capable of literally melting in the mouth releasing sweetness.

The Wagyu beef tartare: a masterpiece of delicacy and texture, where the prized Wagyu meat gave its best in an essential preparation that enhanced its purity.
